Clean Food AUDIT
Introduction
Clean food is an increasingly
important public health issue. It is of extreme importance to our
health and to those of our loved ones, especially when we eat outside
food. More and more we hear of mass food contamination incidents in the
news. This is due to lack of use of proper hygiene by employees
preparing and serving the food, food adulteration and failure of these
facilities to adhere to strict food and safety laws.
The indifferent attitude towards
clean food and overall lack of awareness regarding this subject in
India, prompted AEC to launch the Clean Food Audit Program. The audits are designed based on International
Food Safety Standards. In addition to the benefits of the auditing
exercise, the audits are also useful in educating the concerned
personnel regarding food safety norms.
The audits are useful to companies
with canteen facilities, college mess, hospital canteens, restaurants
& hotels, caterers and all retail food outlets. The audits are
carried out by AEC trained and experienced sanitarians, environmental
health specialists, microbiologists, HACCP certified auditors, etc.
A highlight of the audits is the special AEC Clean Food Seal,
which is exhibited at the audited establishment. This allows the
employees, customers, visitors, etc to appreciate the concern shown by
the establishment for their health and overall food safety.

Food audits
provide a credible verification system to the entire process of food
material procurement, food preparation & food serving. These Food
Audits have not only been successful in identifying potential problems
in the food quality, but have also helped in increasing goodwill and
reputation.
Potential Hazards
Food contamination is when something makes the food inedible or can cause illness when consumed. Contamination can be:

Biological (bacteria, parasites, viruses, etc.)

Contamination is
not necessarily obvious or visible. It can happen due to adulterated

Audit Objectives
The main goal of our Clean Food Audits is to identify unsafe food, personal hygiene and sanitation
issues and to suggest procedures to reduce risk to consumers health.
The Clean Food Audit is conducted in an
easily understandable approach that follows the flow of food from
receiving to service. We conduct the Clean Food Audit Program based on HACCP-Based Standard Operating Procedures and Good Management Practices (GMPs).
Special focus
is given to Operational Methods, Personnel Practices, Cleaning
Practices, Pest Management, Storage Conditions and Disposal
Systems.
We have on
panel trained and experienced sanitarians, environmental health
specialists, microbiologists and HACCP certified auditors.

Certification Flow Chart
Certification & Validity
After successful completion of the norms, a Clean Food certificate is issued to the Customer by AEC. The certificate mentions
the location/s covered under the certification for food preparation as
well as food serving. The certificate is valid for a period of one
year from the date of issue, subject to two Surveillance Audits within
that period.
A Clean Food Certification Seal is presented, which is to be exhibited at the food
preparation and food serving location. The certification seal is for the
information of the Consumers that the food prepared and served at the
specified location is Clean Food certified.
Audit Standards
The AEC Clean Food Audit program checks on the basic requirements that a facility must
meet in order to prepare and serve wholesome food. The AEC Clean Food Audit program is evolved using the applicable Standard Operating
Procedures (SOPs) and Good Manufacturing Practices (GMPs) indicated in
established Domestic and International Standards for Food Safety, e.g.

- Food Safety & Standards
- FAO, WHO and Codex Alimentarius
